It's the Hircine Daedric altar quest - you need to be level 17 to do it.

Word of warning - if you have Shadowmere as your horse, and want to keep it, then don't try to ride the unicorn. It will replace Shadowmere as your horse, which is pointless when.....well, you'll find out when you do the quest.

Just do the quest, otherwise you'll lose Shadowmere as your nag of choice.

its worth noting you can just stumble upon the unicorn, kill the minautours protecting it get on it before it runs off and it becomes yours. Like a certain sword people keep going on about, you dont actually have to do a mission for it to appear, thyre both already there in the game....

Actually you do. If you stumble upon it, it will attack you and your only option is to beat it into a bloody pulp.

Not quite - it will attack you only if it sees you with a drawn weapon, at any time. This includes when you fight the Minotaurs, so it is a bit of a challenge to kill them and not have the Unicorn go aggro.
