Be a wood elf and go for what you want in terms of skills/birthsign/attribute enhancements

I did a vanilla Wood Elf Acrobat born under the sign of the Shadow. Works pretty good as an assassin and a thief.

Do not meddle in the affairs of Dragons, for you are crunchy, and good with Ketchup.

Here, let me help you out for a good assassin.

Race: Either Kha'jiit or Wood Elf.

Major Attributes: Agility and Endurance

Birthsign: The Thief

Major Area: Stealth

Skills:
Blade
Marksman
Light/Heavy Armor (If you're good it won't matter.)
Sneak
Security or alteration (You can use spells to open locks if you feel so inclined.)
Illusion (You can disguise yourself, paralyze opponents, and stop people from atacking you with these spells.)
Block. I know it sounds Warrior-ish, but sometimes they'll see you and you'll need the extra Defense.

Tips:

Try to max out your endurance first. This can be done by leveling up your Block, Armorer, and Heavy Armor skills. Agility is important too. You'll want to use a bow, mostly, for your stealth kills, so it's good to get a nice enchantment on one. Maybe do the Mage's Guild questline to open up the arcane university.

If you go with heavy armor, make sure your sneak is up to 50 before you try anything hard. Once you hit journeyman in sneak, you're just as silent in light armor as you are in heavy armor.

Illusion is important. Chameleon, Invisibility, Paralyze and Charm are an assassin's best friend. If possible, enchant your bow of choice with paralyzing arrows. Also, some charm spells can be good if you're getting beaten up. Use a charm and then yield so you can rest.

The other stuff you'll figure out along the way. Good luck.
I know everything about Morrowind.

Everything.

I still say you should go with luck and endurance since they are the only two real options at that point.

But go with whatever you want they both work.

In my opinion, picking luck as a favored attribute is not a smart thing to do. Somewhere in the tips or manual it says that the skill associated to the favored attributes increase more quickly.

Since there are no skills associated to luck, that would be a waste (again, in MY opinion). The only positive then is the +5 to luck. But the thief birthsign already gives +10 to luck.
