Some traps can be disarmed by sending summoned creatures over them. There aren't many summoning items a Monk can use (or acquire without opening locks or pickpocketing), but the Black Spider Figurine comes to mind. I always play with more than one character and my party has a variety of skills, so I don't think about these things very much.
To answer your question though: Yes, it's doable. The vanilla game has been soloed by every class in the game. It's not an easy task though, as you miss out on many things. I'd recommend that you have great knowledge in the game and it's mechanics before you try to solo it.
For avoiding to have to trigger the traps you can install the "No Traps or Locks"-component from the BG2 Tweak Pack you can get at G3: Downloads
I'd also install the "Identify All Items" , unlimited stacks and the official "Bonus Merchants" components and download the BG2 Fixpack from there.

Are there any levels that requires the use of thieving skills to unlock chest to get keys in order to pass thru.

Hi Half orc.
I've used a Paladin and managed to solo the game. You don't need all the stuff in every chest, the best things you get when you kill bad-guys or complete a quest.
