Ya know I gotta say I cant believe their is no way to drink health potions with the touch of a single key.
Am I doing something wrong?
You have to open your char screen and then click on the potion button and then click on the potion to drink? Is this correct or am I missing something?
Also is their a quick save and quick load button cause their is nothing in the menus?
Also when you die do you have to QUIT game and reload everytime?

Yes-of sorts.
What you should do is bring up the inventory screen. On the left side of the screen should be the items in inventory which you can scroll through. At the bottom of the screen, there should be 7 or 8 (can't remember exactly how many) small windows or slots. Put your cursor over the item in your inventory, say a potion or rune crystal and press a corresponding number on your keyboard, like a 1 or 5 for example. The item in inventory should now displayed in the little window corresponding to the number you pressed. During gameplay, all you have to do is press that number and the slot will be activated, so for example let's say you placed a heal potion in slot 1, pressing 1 during gameplay will correlate with drinking a heal potion, saving you the tedium you mentioned earlier. Also-its important to note that its generally a good idea to use potions instead of runes especially for in combat healing because its faster (ie the healing animation doesn't have to play, so your health goes up immediately, leaving you free to attack, etc. etc.
Sadly, I don't know of a quick save or quick load because the game is continuous, meaning if you leave the game, you come back to where you left off. You have to get out of the game (exit via escape key) NOT save and the reload a prior save game in order to backtrack (like if you desire to reroll a treasure chest, for example) otherwise as you noted, you have to die and revive, potentially losing some xp in doing so. That's one reason I keep multiple saves as I go.

Caveat: Do NOT double click on the item in inventory, otherwise the game will activate/use the item. Just hover your mouse que over the item, THEN press the number that corresponds to the slot you wish to put the item into. I made that mistake several times, yelling at the game each time it fired off a heal spell or used up a potion. Took me a while to figure out what it was doing..
Also, if you sell an item like a potion or reagent to a vendor, that vendor will stock an unlimited amount of that potion or reagent for sale from that point on, even if they didn't offer it originally. Great way to get multiple runes, spell books or even make some gold on the exchange if the item is bought for a higher price than it costs.
