If I multiclass a Ranger(d8), Assassin(d6) and Frenzied Beserker, which hit die would my character end up using(d12)?

You get different hit-dice for each class... When you take a Ranger level, you use a d8, when you take an Asassin level you use a d6, and if you then take a Frenzied Berserker level you use a d12...

*nods* Very few times do you end up with a permanent alteration of your HD in the DnD system. Since I don't think you can take any of the templates that do so in this game, you will get whatever hit dice is attached to your current class for the level you have taken.

Which means, for a front line arcane caster, the 1d6 HD for every level of Eldritch Knight may just be worth spending a feat and losing a caster level in order to net on average an extra hit point every level when you take the class, without figuring in the base attack bonuses you get.
