OK, to be fair, I did go back to an older sherriff thread on this topic, but it had been closed, so sorry, Moderators, I gotta start a new one. Give Buck my apologies.
Anyhow, I think we're all familiar with the canonical ways of handling the Sherriff. I can normally take him in the canonical ways, but by the time I hit the rooftop, I'm HOIT. Like five seconds from falling into an ash-tray. If I'm not, it's because I already had to use the Chalice just to beat the gorilla inside, and now I'm down to blood bags. Either way, the chalice gets used before I even start the battle on the roof-top.
Well, once more into the fray, as it were, and this time I had my character juiced - max Domination, max Thaumaturgy. Going in, I did the ritual prep and then stopped and said to myself, "Self? Why not try something new? All you can do is be killed." Tremere - packing - supposed to be feared amongst the Kindred. Maybe it's time to get Medieval on him. Spoiler blacked out.
So I rolled my wheel and turned up Blood Boil, whipped out my magic blade, made with the leather armor, and sallied forth to do some damage.
First, no it won't kill him. It does hurt him a Whole Bunch, though. During the battle, I managed to tag him twice. Boy, look at that blood bar roll back. Ouchie! I finished the battle inside in record time, and made it to the roof-top with hardly a scratch. Once on the roof, back to the canonical ways of wasting a gigantic bat.
Just as a foot-note, this time around (and I haven't confirmed this yet by trying again), once on the roof, he seemed weaker and more cautious than ever before. It was the fastest and easiest roof-top fight I've ever had. I was all over Lacroix like a cheap suit before you could say Quetzilcoatil.
Anahoo, if there are others who would like to take this approach, let us know how it works for you.

Behemoth
I have always found that the searchlight and flamethrower technique are pretty quick - depends on how quickly the behemost hits the beam, but once it is down, two gas cannisters can fry him pretty much to a cinder along with anything else that comes at you. if there is anything left on the life-bar, with a tremere, as you say - blood boil/strike/salvo - but if not that then an automatic pistol - or the good old T-blade can frizzle his butt.
one 12-round magazine seems enough at close range.
the problems only occur if you don't get to the searchlight before you get disorientated or too many enemies engage you whilst you are suffering from dizziness - otherwise, the final fight is easier than the Sheriff. I usually have conserved by blood-packs, so using disciplines is often a readily avaialble option - discipline and/or guns.
