You're not alone. Empty grand soul gems are pretty rare. Most of the mages guild halls have an NPC who will sell one, and some of the guild halls have them on display (Chorrol for sure, maybe others). There are a few in the arcane university - I know there's one in a case in the lobby of the arch ...

Double-check your gems to make sure they don't have souls in 'em already. Even if you never cast a soul trap, it might have had one in it when you found it (and there's nothing more annoying than finding a grand soul gem with a petty soul in it). To find a ranged soul trap spell, search the GB ...

For challenges, I'd suggest the fighter's guild over the mage's--though neither, approaches the dark brotherhood, in my opinion.

For the rest, I just wish you were playing on a PC. No offense to your choice, but there are already some quest mods out, more coming, and plenty of tweak mods that ...

1. Is the soul gem empty? If it already contains a soul then it won't change.

2. Is the spell you are using a target or touch spell, I had problems when using a touch spell, but never when using a target spell.

Just keep waiting for 24 hours at a time then after you do it about 5 times or so then just wait normally. Just leave the game on for a couple minutes and he should show up.
