For both I'd have to go with Keldorn. Throughout SoA and into ToB he takes on a paternal-like role, yet doesn't act one-dimentionally in doing so.
He is patient with Anomen and does not dwell on his past transgressions which is what you expect out of a true noble-type paladin, but also what we expect from our parents in general.
The two bits between him and Yoshimo are curious - he's quite abrupt with him regarding his family, which is what you expect in a sense. Then there's the whole bit with the poem written in the margins of a religious text where he gets embarrased.
He's troubled by the protaganists past and worries about it. Yet when it looks like good is winning out, he comments on how little by little, good wins out. He does this without forcing himself down the protaganists throat (unlike say, oh...I don't know...Anomen?). It looks like if your reputation falls too low, he will apologize and then explain why he has to kill you. He doesn't lecture you (as you'd expect Anomen might) to boot!
He has no problems with Haer'Dalis, and seems to joke with the bard! An interesting display to say the least, coming from someone that initially looks like your typical cookie-cutter Paladin goody-two-shoes type. On the flip side, he doesn't like Jan's humor one bit.
His theological discussions with Cernd and Aerie show that certain "with age comes wisdom" cliche.
Even his ending is very appropriate, one of the few I found no real fault with.
My only quibble is the lack of interaction with Mazzy. The one bit they have in ToB is just a "I respect you a lot" "Same here" which is rather shallow IMO. Especially given Mazzy's "really a paladin, just called a warrior" characteristics.

Add all that to the most brutal and effective spell-defense stripping ability, true-sight on demand, and Carsomyr (or Ravager or Firetooth!) - all in all a very well built character from both a RPGer's and Powergamer's viewpoints.
