Latest Solo Game
I had a moon elf named Veldrin (drow picture) that was a fighter/cleric. I had the game on Very Easy because I find IWD2 extremely difficult compared to the other IE games.
I had some difficulty with the more annoying fights, particularly outside the Horde Fortress and entering the Severed Hand. However, I'm pleased to report I made it through eventually without ever cheating or even resorting to 'cheese' tactics (my basic approach was to buff and wade in, and failing that I would search through my inventory for something to assist me).
In the end, Veldrin was a level 12 fighter / 13 cleric and I am very much looking forward to soloing him through HoF mode. Even if I lost most of his items on export because they were stored in containers (D'oh )
Stats (from memory, I'm at work now)
Str 18
Dex 15
Con 10
Int 10
Wis 23
Cha 10
Fortitude: +21
Reflex: +20
Will: +26
Dual wielding +4 Vampiric Longsword and +4 Longsword
Equipped items: Pit Fiend Plate ( Armor Bonus +10 ), Cloak of Displacement, Worg Collar, Boots of Speed, Gauntlets of Weapon Expertise, Every God Ring, Ring of Regeneration, I forget which helmet (it provides permanent Death Ward while equipped)
Main Hand BAB: +26
Off Hand BAB: +23
UnBuffed Hit Points / Armor Class: 198 / 22
Now the super hard part: Skills & Feats
Skills
Intimidate 14
Bluff 2
Diplomacy 7
Spellcraft 4
Knowledge (Arcana) 4
Concentration 7
Feats
Ambidexterity
Two Weapon Fighting
Martial Weapon Large Sword: 3
Simple Weapon Mace: 3
Great Fortitude
Combat Casting
Lightning Reflexes
Dash
Dodge
Iron Will
Notes: It was a mistake to make this guy a moon elf, because of the possible XP penalty. I actually leveled him to fighter 6/cleric 8 while in the Horde Fortress, and boy did I pay for it. I lost about half a level's worth of experience there once you account for the threat adjustment. Intended to be a fighter wizard (no XP penalty ever) but was made a cleric because solo characters can really use healing.
All in all, fun, if a little frustrating sometimes. I hate how most fights turn into ridiculous slugging matches because every monster within 500 feet comes running if you injure one of them. Realistic, but if I wanted to take on half the world at once, I would rather have a choice about it.
There will be much bragging and chest thumping if I ever complete HoF without burning my house down.

*** Baldur's Gate 2 spoilers ***
Veldrin; isn't that the name you're supposed to take when the Silver Dragon disguises you as drow when you are in the Underdark in BG2? I know I heard that name somewhere...
Ontopic:
Sorcerers usually make a good class to solo, but I don't know if this game is the same, because I think a low level sorc would have a really hard time against the hordes of goblins. I think cleric would be the best, because they are decent fighters and they can cast spells to heal and buff themselves.

All that is gold does not glitter,
Not all those who wander are lost,
The old that is strong does not wither,
Deep roots are not reached by the frost.
From the ashes a fire shall be woken,
A light from the shadows shall spring,
Renewed shall be the blade that was broken,
The crownless again shall be king.

Yes, Veldrin is the given name from BG2. It was the first name that popped into my head upon completing creation of this character.
The best class to solo without multiclassing: Depends on your style of play. A fighter would be easy at first, but the lack of magic would get to be a problem later on. A sorcerer would own later on, but would find himself at the Palisade running around using a ranged weapon praying that a goblin archer didn't get past his shield spell. I can definitely agree with cleric, as they have the ability to fight decently and can increase that ability with spells such as Bull's Strength, Bless, Armor of Faith, Protection from Evil, and Aid, even at relatively low levels. Later on, Lathander's Greater Shield and Divine Shell coupled with Champion's Strength and Holy Power are a true boon.

I think Demarchs of Mask are the best. They get most of the best Arcane spells available. I mean a Cleric/Druid with mirror image? Just think, a bunch of Cleric power-up spells, mirror image, then turning into a Dire Panther. What exactly is anyone going to do? Save possibly explode in a fountain of blood and a sprinkling of meaty chunks?
Ne'er insult an Elf, lest you get perforated.

Hey I'm a database programmer, I'm paid to sit in front of a computer 8 hours a day. I can do a little surfing, so long as I meet my deadlines.
IIRC, Aasimar have 5 points fire, cold, and acid resistance, Tieflings are 5 points cold, electricity, and acid. I'm not 100% sure that is right, but I do know that Aasimar and Tieflings are resistant to three elements: two of the same and one that they do not share.

Aasimars have +5 resistance to Cold, Electrical and Acid.
Tieflings have +5 resistance toCold Electrical and Fire.
Why does this mix so well with Stormlord of Talos?
