Triple class will take forever to level up in a four character party.
Also, Edwin cannot use shields.

Barbarian is good but only situationally useful and much better when multi-classed with Fighter levels

Yeah, Barbs can't multi-class in ToB.

Sorcerers are the most overpowered class, and can solo the game most easily. C/M can also solo the game easily, but I wouldn't call single-class clerics ...

3. I have unusually high stats across the board (don't ask me how it happened...ahem), how will this affect things?

Well, high STR means you will be able to carry much, and will not need to think before casting Melf's Minute Meteors. High DEX will give you a nice AC bonus. High INT will give you ...

UAI is the most overrated HLA. Yes, overriding class restrictions is very nice. Kensai 12 -> Thief is powerful, I do agree. But, come on, a thief wielding Holy Avenger!? That's just silly. Also, Blade can cast spells from the start, and he still gets to pick UAI, so...

And by the way, if you ask me, thieving skills are useless!
Backstabbing deals some nice damage, but the most powerful and annoying opponents are immune to backstab. And a couple of your tanks will make a short work of weaker opponents even more quickly than a backstabbing thief.
Traps are nice, but ...

I believe that having more than 100 points in Hide in Shadows allows you to hide in broad daylight, though not in plain sight. Having more than 100 points in Find Traps would make you find them more quickly.
Anyway, you only really need about 80 in Find Traps and Open Locks.

I could swear that a high wisdom score gave a bonus to saving throws for all classes.

It does say so in the manual. However, the manual is wrong. WIS doesn't affect saving throws at all!

This is my real problem with choosing a character class, particularly for a long term "commitment" (kinda) like playing the Trilogy: it's hard to find a balance of a character that is accessible enough to play though BG1 and doesn't get boring after awhile. The Paladin, the Archer, the Barbarian ...

Swashbucklers are great fighters, and IMO the only useful thief class from a powergaming perspective. (yeah, I know I will get flamed; assassins are nice sometimes, and bounty hunters are useless most of the times)

However, playing easytutu with Swashbuckler + Imoen could be frustrating. I'm not ...

Are you going to play BG1 or easytutu/BGT? Easytutu might be hard with just PC, Imoen and Viconia.

Anyways, I would go with a human fighter, berserker.
You could roleplay and say that PC actually was just an ordinary guy, say he knows a thing or two about axes or swords, but after witnessing Gorion ...
