Aerie, Jaheira, Anomen, and Viconia are infected with vampirism only if you've romanced them before going to the final fight with Bodhi.
Valygar's body appears if you kill him instead of taking him into your party, and can be used to open the planar sphere.

When I played Anomen didn't get knighted until level 15, leading me to believe that his test for knighthood is some kind of random.
So, if you've finished all possible quests, then you're kind of screwed as far as I'm concerned.

The 'exploding' effect is definitely linked to the slayer change. You'll notice that that effect occurs when you change into or from the slayer. I don't know why it keeps happening afterwards, but I believe it's a bug.
