As the title, does anybody know what level of manoeuvrability a Cleric would have flying under the effects of this spell?

In any case, searching for "D&D feat list" in Google turns up WotC's http://www.wizards.com/default.asp?x=dnd/lists/feats for 3.5. I didn't find anything like this for "hide", "hidden", or "stealthy", but you might want to poke around.

Well if you are wanting to use sneak attack (as in extra damage) then you will have to take Rogue, as Rangers do not have access to sneak attack. I have looked at the Invisible Blade but I just don't like the idea of not wearing any armour at all. You would need a really high Intelligence modifier to make it worthwhile and it's unlikely that someone with such a high Intelligence wouldn't be a focused spellcaster.

In the players handbook it says that you must move at least 5 feet both before and after your attack to use Spring Attack feat. Bounding Assault adds another attack, and Rapid Blitz adds a third.

My question is, if I have all three of these feats, can I move 5 feet, attack, move another 5 feet ...

I don't see what downsides you are trying to avoid. Enlarging a Halfling will make you lose the +1 to hit and AC.

I know it would cost a hell of a lot of coin, but if you got the axeblock, spearblock and hammerblock enchantments on your armour, would you have damage reduction 5 that could not be negated by anything?

How would this work? You would get an attack of opportunity when the opponent moves through your threatened square, do you then get another attack of opportunity when they try to start the grapple? I would think not, as you can't normally strike the square they are now occupying, but the feat ...
